Spaghetti with Broccoli is such an easy and delicious recipe. I don’t veer away too much with my variation on this classic and hey! If you need a way to hide broccoli from friends or family that don’t like it, this method is a great way to disguise it. Just call it “green sauce”
SPAGHETTI WITH BROCCOLI

Serves: 4
Ingredients
1 lb spaghetti, reserve pasta water
1 cup extra virgin olive oil
2-3 cloves garlic, thinly sliced or chopped
Chili flakes, to taste
1 bunch broccoli, chopped into small riced size pieces
Salt, to taste
Freshly cracked pepper, to taste
100 g Parmigiano-Reggiano, finely grated
Method
1. Cook the spaghetti in a large pot of boiling salted water. Remove pasta a few minutes before done, as you will finish cooking the pasta in the pan.
2. While the pasta is cooking, in a large frying pan over low-medium heat, heat extra virgin olive oil and add garlic and chili flakes. Saute until tender fragrant. Add the broccoli and sauté for a minute or two. Add a ladle or two of pasta water and cook it down a bit. Add spaghetti and finish cooking, mixing and tossing, adding more pasta water, if needed. The starch in the water will help form our sauce.
3. Add your cheese a handful at a time and mix and toss adding more pasta water if needed. Enjoy!
