Sausage With Cheese and Onions Sandwich

Sausage with Cheese and Onions - what a sandwich! It's always satisfying when ingredients go so well together and this sandwich is perfect. The caramelized onions transform this dish into a magical sandwich, and who wouldn’t want a magical sandwich?



SAUSAGE WITH CHEESE AND ONIONS SANDWICH

Serves 2


Ingredients

3 yellow onions (sliced ¼ inch thick)

2 tbsp butter

2 tbsp extra-virgin olive oil

Salt, to taste

1 tbsp balsamic glaze

5-6 sage leaves (chiffonade or finely choped)

4 sausages (2 hot, 2 sweet, casings removed and crumbled)

2 panini buns (10 inch)

150g fontina cheese (coarsely shredded)


Method

1 Heat 1 tbsp of extra-virgin olive oil and the butter in a pan over medium to high heat. Add onions and mix to coat. Leave undisturbed for 3-4 minutes to start the browning process. Give another mix and at this point you can leave again for another 3-4 minutes or bring heat to low. This process will take anywhere from 30-60 minutes, depending on personal preference, so check and stir often. If you are developing fond on the pan you can deglaze with water. Just before removing the onions, drizzle balsamic glaze, mix and continue to reduce if needed. Set onions aside.


3. In a pan on medium heat, add sausage and cook, stirring occasionally. You can break up the sausage up into pieces with your wooden spoon. Once sausage is 80% done add the sage and finish cooking. I like to brown up the sausage as they start to get crispy. Set sausage aside.


4. Toast bread in the pan with all the juices from the sausage, you can toast with some butter and extra virgin olive oil or toast in the oven. Or don’t toast at all.


5. Build your sandwich by adding a bed of caramelized onions and then add the sausage on top. Add fontina cheese and as it melts it will help hold everything together. Place sandwich under the broiler until the cheese is all melted and bubbly. Enjoy!
