I love a lot of bitter foods and drinks, so when it comes to radicchio and endive, just add these two to the list. This salad is fresh and light with great flavour. If you aren’t sure about radicchio and endive and find that it is too bitter for you, give this salad a try. The combination of sweet pear and the delicate dressing will help balance everything out. I love this salad and it comes together quick and its really refreshing. Enjoy!
RADICCHIO, ENDIVE AND ASIAN PEAR SALAD WITH A HONEY DIJON DRESSING

Serves 2-4
Ingredients
1 medium head, radicchio, washed, outer layer removed, remove core and chopped or sliced
2 small-medium Belgian Endive, washed, outer layer removed, remove core and chopped or sliced
1 Asian pear, half or full, sliced or chopped
60g Walnuts, chopped and toasted
Dressing
Extra virgin olive oil, to taste
White wine vinegar, to taste
Honey, to taste
Dijon mustard, to taste
Salt, to taste
Freshly cracked pepper, to taste
Method
Dressing - This can be all to taste so sort of eyeball it and adjust to your liking. Whisk together, extra virgin olive oil, red wine vinegar, dried oregano, chili flakes, honey, lemon juice in a medium bowl. Season to taste with salt and freshly cracked pepper. Set aside, can be made a day before to let the flavours mingle.
2. In a large dry frying pan on low-medium heat, add walnuts and toast for 4-5 minutes or until browned. Place in a bowl and set aside.
3. Add the dressing to your bowl with radicchio, endive, pear and mix to coat everything. Plate and garnish with toasted walnuts and freshly cracked pepper. Enjoy!
