Grilled Peaches With Fresh Mozzarella

Grilled peaches with fresh mozzarella is not only delicious, it's refreshing. Adding chili, fresh basil and honey is just the perfect combination. Of course I used the best peaches around, Mackinaw peaches, what else is there? Life’s a peach!

GRILLED PEACHES WITH FRESH MOZZARELLA

Ingredients

2-3 large peaches, pitted and cut into ¾-inch slices

1-2 Calabrian or Thai chilis, seeds removed and sliced

Extra virgin olive oil

8 oz Mozzarella di Bufala

Salt, to taste

Freshly cracked pepper, to taste

4-5 Fresh basil leaves, torn

Honey, to taste


Method

1. Once peaches are all cut, place in a large bowl. Lightly coat peaches with extra virgin olive oil and season with salt. Place on the grill and grill until lightly charred on both sides - about 3-4 min per side. Remove from the grill and set aside.


2. Lay peaches on a platter. Tear apart pieces of the Mozzarella di Bufala and layout on platter. Sprinkle chilis and torn basil. Season with salt and freshly cracked pepper. Finish with a light drizzle of honey. Enjoy!
