This cucumber and radish salad is the perfect summer garden fresh salad. If you aren’t in the mood for a leafy green salad but want something fresh and healthy, this is a great recipe to try. CUCUMBER, RADISH AND FRESH DILL SALAD

Serves 4 (side dish)
Ingredients
¼ cup extra-virgin olive oil
2-3 tbsp. rice wine vinegar
½ to 1 small shallot, finely chopped
Honey, to taste
Salt, to taste
Freshly cracked pepper, to taste
¼ fresh dill, finely chopped, more for garnish
2 Persian baby cucumbers, thinly sliced or cut into chunks
½ medium sized English cucumber, thinly sliced or cut into chunks
½ medium sized field cucumber, thinly sliced or cut into chunks
4-5 small radishes, thinly sliced or cut into chunks
Method
1. Lightly whisk oil, rice wine vinegar, shallot, honey and dill in a large bowl; season with salt and freshly cracked pepper. You can prepare the dressing beforehand so that the flavours have time to develop.
2. In a large bowl add cucumbers and radish. Add dressing and toss to coat. Plate and garnish with fresh dill or freshly cracked pepper. Enjoy!
