This broccoli and chickpea salad recipe is the perfect healthy dish to add to a BBQ or party. No cooking is involved and everything can be done in about 15 minutes. If you are looking for something that is crunchy, fresh and delicious, I hope you give this a try.
BROCCOLI AND CHICKPEA SALAD WITH CHERRY TOMATOES, CUCUMBERS AND RED ONION

Serves 4
Ingredients
1 medium-large broccoli head, chopped into bite sized florets
1 can chickpeas, drained and rinsed
250g cherry tomatoes, halved or quartered
3-4 small Persian cucumbers, diced
½ small-medium red onion, finely diced
¼ cup fresh Italian parsley, finely chopped
For the dressing
½ cup extra virgin olive oil
3 tbsp rice wine vinegar
2 tbsp Dijon mustard
1 tbsp honey
Salt, to taste
Freshly cracked pepper, to taste
Method
1. Place all ingredients in a large bowl.
2. Whisk, extra virgin olive oil, rice wine vinegar, Dijon mustard and honey in a medium bowl. Season to taste with salt and freshly cracked pepper. Feel free to adjust measurements to your own taste preference.
3. Add the dressing to your bowl with all the ingredients and mix to coat all the vegetables with the dressing. Enjoy!
